What is Abundant Earth Kitchen? This is the new venture of the mother and daughter team of Lolita and Patricia Haverstick. Lolita and Trish have been working together on the co-op for a number of years now, and in August 2010, Lolita decided she wanted to share her passion for gluten-free and allergen-free cooking (plus local, organic and healthy!) with others by producing gluten-free food “to go.”
Both women have always enjoyed cooking and baking. Almost 10 years ago, mother and daughter went gluten free. This transformed the way they cooked and baked. Then, seven years ago, Trish’s daughter was diagnosed with pediatric allergic-pericolitis — which, in her case, meant that she was allergic to all the eight common food allergens (wheat, cow’s milk, soy, peanuts, tree nuts, fish, shellfish, eggs) plus corn, sulfites, and goat’s milk. Trish was committed to breastfeeding so this now meant that she could not eat any of these foods (nor gluten for her own sake). This experience made gluten-free cooking and baking seem easy!!
The adventure in trying new ways of cooking and baking had begun. When Trish’s daughter was first diagnosed, there were very few products available that fit the criteria listed above. So, Trish either went without, ate the only chocolate chip cookies she could find (after tasting the cookies, one friend said “these are good if you are expecting zucchini bread”), or ate whatever she or her mother whipped up. They looked high and low for allergen free resources and have been building on what they had found ever since.
